ABOUT THE DISH:
The word Shahi means “Royal” and the shahi paneer dish has its origin in the Mughal Empire days. The name gives a feeling of an elaborate making process but quite frankly it is very easy to make. INGREDIENTS:
- 250 Grams of Fresh Paneer.
- 4 Tomatoes, 2 Onion, 4 Garlic Cloves, 10 Grams Ginger.
- 6 Cashew Nuts & 6 Almonds.
- 50 Grams Butter,10 ML Fresh Cream and 2 Spoon Oil.
- 1 Teaspoon each of Red Chili Powder, Salt, Turmeric Powder and Garam Masala
COOKING TIME: 30 Minutes.
COOKING INSTRUCTIONS:
Making Shahi Paneer essentially requires making the Shahi Puree separately and then adding Paneer into the Puree. The first 2 steps are about the Puree.
- Take a Pressure Cooker and add 2 spoons of Oil. Now add in diced Tomatoes, Onion, Cloves, Ginger, Cashew Nuts and Almonds. Stir this combination on medium flame for about 5 Minutes. Now add 1 Cup of water, close the lid of the cooker and wait till 4 whistles.
- Let this above mixture cool down. Once it is cool enough, empty it all in a Mixer Grinder and churn it to make a fine and smooth puree.
- Take a Pan or a Kadhai and add 50 Grams of Butter. Add the combination of all the masala i.e. Red Chili Powder, Salt, Turmeric Powder and Garam Masala. Stir well for about 2-3 Minutes. Now add the cubes of Fresh Paneer and Sautee for about 2 minutes.
- Now add the Shahi Puree into the Pan and allow the paneer to be cooked in this puree for about 15 minutes.
- Add on Top 10 ml of Fresh Cream before being served.
