- 1 Cup Millet (You Can Use Any Millet Variety Like Foxtail Millet, Little Millet, Or Pearl Millet)
- 1/2 Cup Split Yellow Moong Dal (Lentils)
- 1 Small Onion, Finely Chopped
- 1 Small Tomato, Chopped
- 1/2 Cup Mixed Vegetables (Carrots, Peas, Beans, Etc.), Chopped
- 1 Teaspoon Cumin Seeds
- 1/2 Teaspoon Mustard Seeds (Optional)
- 1/2 Teaspoon Turmeric Powder
- 1/2 Teaspoon Red Chili Powder (Adjust to Your Spice Preference)
- 1/2 Teaspoon Garam Masala Powder (Optional)
- 2-3 Cloves Garlic, Minced (Optional)
- 1-Inch Piece of Ginger, Grated
- 2 Tablespoons Ghee or Oil
- Salt To Taste
- Fresh Coriander Leaves for Garnish
- Water (Approximately 4 Cups)
- Lemon Wedges for Serving (Optional)
COOKING INSTRUCTIONS:
- Wash The Millet and Moong Dal Separately and Soak Them in Water for About 20-30 Minutes. Drain And Set Aside.
- In A Large Saucepan or Pressure Cooker, Heat Ghee or Oil Over Medium Heat. Add Cumin Seeds and/or Mustard Seeds and allow Them to Splutter to add aroma.
- Add Minced Garlic (If Using) And Grated Ginger. Sauté For a Minute or Until Fragrant.
- Add Chopped Onions and Sauté Until They Become Translucent.
- Add The Mixed Vegetables and Sauté For A Few Minutes Until They Start to Soften.
- Add The Chopped Tomato and Cook Until It Becomes Mushy.
- Add Turmeric Powder, Red Chili Powder, And Garam Masala Powder (If using). Cook for A Couple of Minutes and Mix at Regular intervals.
- Add The Soaked and Drained Millet and Moong Dal to The Pan. Mix Everything Together.
- Add 4 Cups of Water and Salt to Taste. Stir Well and Bring the Mixture to A Boil.
- If Using a Pressure Cooker, Close the Lid and Cook For 2-3 Whistles. If Using a Regular Saucepan, Cover with A Lid and Simmer on Low Heat Until the Millets and Lentils Are Cooked and The Khichdi Has a Porridge-Like Consistency. Add More Water If Needed and Stir Softly.
